These fish have an outstanding flavour and texture that is not diminished by freezing, provided you cut it up into portions, pack these tightly in foil and freeze fast. The whole fish is a bargain. I've just cut one up and have got 8 large portions (circa 7-8oz); two smaller fillets (3-4oz); cubes for fish pie (total about 11oz) and trimmings to make a salmon mousse, plus the head and carcase have made about 4litres of salmon stock that will go to make the sauces for the fillets.
