Caught in baited creels off the West Coast of Argyll. The langoustine are packed frozen in 1.5kg boxes.To cook, defrost and place in a large pan to suit, with a couple of inches of boiling salted water for 2-3 minutes (add bay leaves if available).

Never as wonderful as freshly cooked, live langoustines but pretty good. They have greatly added value if you use the heads, claws and shells for making a langoustine bisque. I cook them in fish stock and then make Gary Rhodes' excellent recipe for lobster bisque substituting these langoustines.
THESE WERE THE TASTIEST I HAVE EVER EATEN.DELICIOUS!
