Over the years I ordered several of these whole fish (and at other times the sides) and, without exception, they have had the best salmon flavour I have experienced. All have arrived beautifully fresh. The whole fish is a bargain and provides many portions. You don't have to use it all on one day if you're prepared to spend a bit of time filleting, pin-boning, portioning, packing each portion tightly and freezing fast in a single layer. The defrosted fish is perfect when used aat a later date. From a whole fish I average 10 to 12 generous prime fillets plus about 4 portions of offcuts for, say, pasta dishes or fish pie. In addition I make a rich salmon stock from the head and carcase that I use to poach fillets and make sauces to go with the salmon fillets.
